On Saturday, November 22, 2025, Paul Freedman, owner of Dutch Creek Winery in Athens, will be presenting two Charcuterie 101 classes. The first class will begin at 10:00 AM and the second class will begin at 1:00 PM.
Topics covered will include:
- The principles behind developing a charcuterie platter.
 - A brief primer on cured meats and cheeses.
 - How to choose primary and secondary ingredients as well as condiments.
 - Wine pairing and other beverage (including non-alcoholic) suggestions.
 - How to set up the platter for maximum visual appeal.
 
Ingredients will be provided for attendees to create their own small charcuterie board to take home or enjoy at the class.
A question and answer session will follow the presentation.
This class will be limited to 24 attendees and will only be open to those ages 18 and up.
